Sahi Paneer is a popular North Indian dish made with paneer (Indian cottage cheese) cooked in a rich and creamy tomato

Ingredients:

  • 250 grams paneer (cottage cheese), cubed
  • 2 tablespoons ghee (clarified butter) or oil
  • 1 cup finely chopped onions
  • 1 cup tomato puree (from fresh tomatoes or canned)
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup fresh cream
  • 1/2 cup milk
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • 1/4 cup cashew nuts, soaked in warm water and ground to a paste
  • 2 tablespoons fresh coriander leaves, chopped, for garnish

Instructions:

  1. Heat ghee or oil in a pan or skillet over medium heat.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and sauté for another couple of minutes until the raw aroma disappears.
  4. Stir in tomato puree, turmeric powder, red chili powder, garam masala, and salt. Cook the mixture until the oil
    starts to separate from the tomato gravy.
  5. Lower the heat and add the cashew nut paste. Mix well and cook for a few minutes until the gravy thickens.
  6. Pour in fresh cream and milk. Stir continuously and simmer for 3-4 minutes until the sauce thickens further and
    is well combined.
  7. Now, add the cubed paneer (cottage cheese) to the sauce. Gently stir to coat the paneer with the creamy tomato
    gravy.
  8. Cook for an additional 2-3 minutes until the paneer is heated through.
  9. Garnish with chopped fresh coriander leaves.
  10. Your Sahi Paneer is ready to be served hot with naan, roti, or rice.
