Khandvi Recipe | Gujarati Khandvi Rolls

Khandvi is a popular Gujarati snack made from gram flour (besan). These delicate, melt-in-your-mouth rolls are
seasoned with mustard seeds and coconut and are a delightful addition to your snack menu.

Ingredients:

  • 1 cup gram flour (besan)
  • 1 cup yogurt (curd)
  • 1 1/2 cups water
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon asafoetida (hing)
  • Salt to taste
  • 1/2 teaspoon green chili paste (adjust to taste)
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 2-3 green chilies, slit lengthwise
  • Freshly grated coconut and chopped cilantro for garnish

Instructions:

  1. In a mixing bowl, combine gram flour, yogurt, water, turmeric powder, asafoetida, salt, and green chili paste.
    Mix until you have a smooth batter.
  2. Heat oil in a non-stick pan over medium heat.
  3. Add the mustard seeds and let them splutter.
  4. Quickly pour the gram flour batter into the pan and start stirring continuously.
  5. Cook the mixture on low to medium heat, stirring constantly, until it thickens and leaves the sides of the pan.
    This may take around 10-12 minutes.
  6. Turn off the heat and immediately pour the hot mixture onto a clean, greased surface like a steel plate or
    countertop.
  7. Spread the mixture evenly with a flat spatula while it’s still hot.
  8. Allow it to cool for a few minutes, then cut the spread mixture into strips and gently roll each strip into a
    tight roll.
  9. Place the Khandvi rolls on a serving platter.
  10. In a small pan, heat a little oil and add the green chilies. Pour this tempering over the Khandvi rolls.
  11. Garnish with freshly grated coconut and chopped cilantro.
  12. Your Gujarati Khandvi Rolls are ready to be served as a delicious snack!
