Gajar ki Barfi is a delicious Indian dessert made from grated carrots. It’s a perfect treat for special occasions.


  • 2 cups grated carrots
  • 1 cup milk
  • 1 cup sugar
  • 2 tablespoons ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • Chopped nuts (almonds or pistachios) for garnish


  1. Heat ghee in a pan and add the grated carrots. Sauté the carrots on medium heat until they become soft and start
    to change color.
  2. Now, add the milk and sugar to the carrots. Cook on low heat, stirring constantly, until the mixture thickens
    and the carrots absorb the milk. This may take around 20-25 minutes.
  3. Add cardamom powder and continue to cook until the mixture leaves the sides of the pan and becomes a thick,
    fudge-like consistency.
  4. Transfer the mixture to a greased tray and spread it out evenly. Garnish with chopped nuts.
  5. Allow the Gajar ki Barfi to cool completely, then cut it into diamond or square-shaped pieces.
  6. Your delicious Gajar ki Barfi is ready to be served!
