Poha cutlets are a delicious and nutritious snack that can be enjoyed by everyone. These cutlets are made with flattened
rice (poha), mixed with vegetables and spices, and pan-fried to perfection.

Ingredients:

  • 1 cup thick poha (flattened rice)
  • 1/2 cup boiled and mashed potatoes
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped bell peppers (capsicum)
  • 1/4 cup frozen peas (thawed)
  • 1/4 cup finely chopped onions
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1 tablespoon oil
  • Fresh cilantro leaves, chopped, for garnish

Instructions:

  1. Rinse the poha under running water for a few seconds and drain. Allow it to soak in water for about 5 minutes,
    then drain again and squeeze out excess water. Fluff it with a fork and set aside.
  2. In a large mixing bowl, combine the soaked poha, mashed potatoes, chopped carrots, bell peppers, peas, chopped
    onions, and green chilies.
  3. Heat oil in a pan, add cumin seeds, and let them splutter.
  4. Add turmeric powder, red chili powder, and salt. Sauté for a minute.
  5. Pour this seasoned oil mixture over the poha and vegetable mixture. Mix everything together until well combined.
  6. Divide the mixture into equal portions and shape them into round or oval cutlets.
  7. Heat a non-stick skillet or pan over medium heat and lightly grease it with oil.
  8. Place the poha cutlets on the skillet and cook until they turn golden brown and crispy on both sides. You can use
    a little oil for shallow frying if needed.
  9. Remove the cutlets from the pan and place them on a plate lined with paper towels to remove excess oil.
  10. Garnish with chopped cilantro leaves.
  11. Your Vegetable Poha Cutlets are ready to be served hot with ketchup or chutney!
