Poha cutlets are a delicious and nutritious snack that can be enjoyed by everyone. These cutlets are made with flattened
rice (poha), mixed with vegetables and spices, and pan-fried to perfection.
Ingredients:
- 1 cup thick poha (flattened rice)
- 1/2 cup boiled and mashed potatoes
- 1/4 cup finely chopped carrots
- 1/4 cup finely chopped bell peppers (capsicum)
- 1/4 cup frozen peas (thawed)
- 1/4 cup finely chopped onions
- 2-3 green chilies, finely chopped (adjust to taste)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1 tablespoon oil
- Fresh cilantro leaves, chopped, for garnish
Instructions:
- Rinse the poha under running water for a few seconds and drain. Allow it to soak in water for about 5 minutes,
then drain again and squeeze out excess water. Fluff it with a fork and set aside. - In a large mixing bowl, combine the soaked poha, mashed potatoes, chopped carrots, bell peppers, peas, chopped
onions, and green chilies. - Heat oil in a pan, add cumin seeds, and let them splutter.
- Add turmeric powder, red chili powder, and salt. Sauté for a minute.
- Pour this seasoned oil mixture over the poha and vegetable mixture. Mix everything together until well combined.
- Divide the mixture into equal portions and shape them into round or oval cutlets.
- Heat a non-stick skillet or pan over medium heat and lightly grease it with oil.
- Place the poha cutlets on the skillet and cook until they turn golden brown and crispy on both sides. You can use
a little oil for shallow frying if needed. - Remove the cutlets from the pan and place them on a plate lined with paper towels to remove excess oil.
- Garnish with chopped cilantro leaves.
